White Cake Recipe

What you'll need:
2 1/2 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 teaspoon salt
2/3 cup shortening (Crisco)
1/4 cup butter - room temperature
1 cup sour cream
1/2 cup milk
2 teaspoons clear vanilla
6 egg whites
What you'll do:
Separate the eggs into a bowl. Add the milk, sour cream, and vanilla to the eggwhites and whisk together. Set aside.
In a separate mixing bowl, whisk the flour, sugar, salt, baking soda, and powder.
Cube the shortening and butter. Add them to the dry mix, while the mixer is on, and mix until it gets crumbly. Kind of like a sand texture.
Add half of the wet mix to the dry. Stop the mixer and scrape the sides of the bowl.
Add the remaining wet mix and mix until it comes together.
Scrape the sides one last time and mix for another 10-15 seconds. Do not overmix!
Pour into greased pans and bake at 325 degrees Fahrenheit. Time will vary depending on pan size.
Completely cool before icing.

This is one of my favorite recipes to make! It is super simple and always comes out so delicious! I've used this recipe for wedding cakes, birthday cakes, and cupcakes. It pairs well with everything and holds no limit when it comes to frosting. The only thing to watch out for is 1. not overmixing the batter, or you'll knock the air out of the egg whites, and it won't be as fluffy, and 2. watching the varying bake times. For bigger cake pans, it could take anywhere from 30-50 minutes, but I just made this recipe for cupcakes, and they baked for about 15-20 minutes. So, just make sure to keep an eye on the oven when you bake these. Oh, and make sure to use clear vanilla, or the cake won't come out as white.
This recipe makes 24, or 2 dozen cupcakes- I put about 4 tablespoons of batter into each cupcake paper- 2 9" rounds, 3 8" rounds, or one sheet pan. I have made this recipe for each of these sizes, and it comes out perfect every time. However, I have obtained a new oven since baking in some of these-sized pans, so I am unfortunately not much help on how long to bake. I am still tweaking recipes, baking in the new oven. The next time I use this recipe for cupcakes, I may lower the temperature to 300 degrees instead of 325. This cake needs to be baked low and slow. My original recipe, and in the old oven, this cake baked at 325 degrees for 45-50 minutes. Updates will come soon!
